Oh, I see you. PUT DOWN THAT PB&J CRUST RIGHT NOW. I know you’ve got a to-do list and a naptime of indeterminate length during which to complete it, but really, truly, you can make the non-depressing, grown-up lunch you deserve without trashing your kitchen or having really any culinary skill whatsoever.
This weekend, I recommend you do two things: 1) Buy an egg poacher. It feels like cheating but cooking four eggs perfectly at the same time is just efficiency, yo. No need to back up the money truck — mine was $25 on Amazon and works perfectly. 2) Stock up on these staples: eggs, avocados, pre-washed salad greens, tomatoes, pitted olives, a couple of your favorite cheeses, crackers not shaped like rabbits, fancy salt, and a really nutty sprouted grain bread. (I’m a huge fan of Alvarado Street “California Style” Complete Protein Bread.)
Then when your kids take their afternoon quiet times next week, try out some of my favorites:
Avocado roses can f*ck off because they ruin the greatest thing about avocado toast: SPEED.
This works with ratatouille, roasted vegetables, creamed spinach (pictured above), WHATEVER.
Lunch salads feel so much less tragic with an egg on top.
